SHORT DESCRIPTION SUMMARIZING POSITION Full-time, 100% 12-month specialized faculty appointment, primary responsibilities will include teaching and coaching the intercollegiate meats and animal evaluation teams and leading meats extension and outreach associated with these activities; and assisting the Meat Sales Room Manager with on-site management of the Meat Sales Room.
SPECIFIC DUTIES AND RESPONSIBILITIES This position will coach the intercollegiate meats judging team, co-coach the intercollegiate meat animal evaluation team, and teach the courses associated with those teams. They will also teach courses focused on grilling and barbeque science and meat animal evaluation. This position will be expected to participate with the Intercollegiate Meats Coaches Association and cultivate meat judging alumni relationships to advance the Meats Judging program of the University of Illinois. Coordination of various youth activities related to meats judging, such as contests, carcass shows and workshops, is expected.
This position will be an integral member of the Meat Science program and be expected to collaborate in fulfilling the mission of teaching, research, and extension as part of the Meat Science faculty. Assistance in coordination and execution of production and research projects and supervision and training of students working with the Meat Sales Room is expected. Additionally, this position will assist with outreach programs for meat producers in the State of Illinois and beyond.

Given the physical nature of the role of this position, when working, the employee may be exposed to a variety of environmental factors to include, but not limited to, hot or cold environments, exposure to noise and allergens, and uneven ground. In performing the functions of this position, the employee may be subjected to various mental and physical demands as well to include, but not limited to, independently traveling to and performing work at different locations, lifting and moving items that may frequently weigh up to fifty (50) pounds and occasionally weigh up to seventy-five (75) pounds, and twisting, pushing and pulling movements. Required Qualifications:
M.S. degree in Animal Science or a related field. Applicants may be working toward a MS degree may be considered, but the degree must be obtained before the starting date. Demonstrated meats judging experience including participation as a student and some assistant coaching experience. Informal classroom teaching experience is acceptable. Other considerations include experience with humane slaughter and carcass fabrication, as well as ability and proficiency in humane slaughter techniques and fabrication of meat animals.
Preferred Qualifications:
M.S. degree with a specialization in Meat Science. Formal assistant coaching or coaching experience for meats judging. Formal classroom teaching experience. Other considerations include HACCP certification, proficiency in further processing of meat products, and demonstrated involvement and leadership in meat-industry organizations.
