The Protein Group has an opportunity available for a Principal Scientist – research, development, & innovation, this role is accountable for developing value-added cooked meats product portfolio through core, adjacent, and transformative innovation. The role will use culinary input, consumer insights, technical expertise, business planning, industry information, and category data to develop products that drive bottom line growth for the business. The Principal Scientist – research, development, & innovation is expected to:
1) Develop new products and services to meet the value-added growth objectives of Cargill Protein Foodservice, 2) Mentor scientists in cooked meats product development, 3) Commercialize and optimize cooked meats products, 3) Act as a business partner to identify and prioritize new cooked meat product opportunities and next generation customer solutions, and 4) Collaborate across Cargill Enterprises to create an innovative advantage. The ideal candidate will possess high integrity, courage, and character as personal traits.
55% - Chartered project work: Identify, develop and conduct work on high-value innovation opportunities for Cargill Protein, with a focus on cooked meats value-added products to drive growth through Innovation. This will include working with culinary on the development of value-added products for specific customers and for the cooked meats product portfolio utilizing technical expertise in ingredient functionality, meat cuts, and formulation, as well as knowledge of existing Cargill Protein Group equipment, capabilities and product portfolios. The successful candidate will have in depth experience in cooked meat product formulation, application of meat science, and commercializing products.
20% - Mentoring technical team members and working as a technical expert with sales, marketing, food safety, quality, and regulatory. Value will be measured on success rate of projects through the innovation pipeline as well as value from new products delivered annually. This will include mentoring technical team members and sharing expertise to build cooked meat knowledge in the research, development, and innovation function. This role will also work as a technical expert with interacting/building relationships with customers and commercializing products at production facilities in Protein.
15% - Customer focus: working with customers in identifying jobs-to-be done and apply learning’s to product development. Build customer relationships through sharing technical expertise to grow value-added sales.
Serve as consultant for project team on an as-needed basis.
10% - Strategic collaboration across channels: Collaborate with other channels and Cargill business areas for value added protein innovation and creative consumer and/or customer solutions.

Bachelor's degree in meat science/food science or related field
6+ years combined professional experience in R&D
6+ years combined professional experience with cooked meats, formulation development, cooking expertise with an emphasis in deli meats.
Experience and knowledge in beef, pork, turkey, and chicken meat products.
Proven ability to turn ideas into commercialized products (successful innovation product launch)
Demonstrated proficiency in working with ambiguous direction
Experience working successfully in a matrix organization
Design of experiments
Demonstrated financial and business acumen
This position requires a high level of proficiency using Microsoft Office tools and business reporting systems
Strong organizational and accuracy skills
Experience working with cross-functional teams (marketing, insights, sales, ops, FSQR, multiple proteins)
Ability to manage multiple complex projects simultaneously
Excellent communication and conflict management skills required
Good decision-making; ability to prioritize goals and work
Strategic thinker with ability to build effective plans to support strategic initiatives
Must be tech-savvy and comfortable with evolving business-critical technology
Travel; up to 50%
Advanced degree (MS or PhD) in meat science, food science or related field
