Summary of Functions: position manages the overall production, food safety, and meat processing operations with the objective of achieving a high quality artisanal product while maximizing product yields and efficiency.
Major Duties and Responsibilities: • Performs verification of HACCP, SSOP, and other production records to assure products adhere to food safety and product quality requirements. Works with Frigo Meccanica fermentation and aging rooms • Assures the effective completion and documentation of SSOP walkthroughs, raw material receiving and testing, finished product testing and microbiological testing. • Works directly with shop and sales manager to plan and organize production schedules while maintaining adequate raw material inventory. • Oversees production concerning the processing of all raw meat products into and through their final versions as cooked, cured or smoked. • Oversees all production activities including ingredient storage, batch preparation, processing, and packaging to assure consistency and conformance to quality standards. • Oversees the fulfillment of weekly orders for accounts. • Prepares samples for outside laboratory testing and maintains all associated records. • Must have strong commitment to protecting the health and safety of employees, ensure all employees have adequate training on all machinery. Manages materials procurement to optimize delivery, inventory levels and material flow.
• 2+ years meat plant related experience including meat cutting knowledge and experience with cooked and cured products. Cured products include all types of salumi; both salami and whole muscle • Verbal and written communication skills. • Excellent organizational, time management and problem solving skills. • Knowledge of HACCP and GMP systems. The ability to manage and interact with the USDA representative and implement company's HACCP Plan is a must. English/Spanish bilingual is a plus.
