JOB SUMMARY: The PhD meat scientist will be engaged in education and sales instruction at the Certified Angus Beef ® Culinary Center and provide technical leadership for the brand in the core areas of product quality and meat science.
Research and Technical Leadership Actively engage industry organizations and the scientific community:
1.As a representative of the brand, conveying our thoughts and ideas around the need for continuous improvement in beef quality
2.As a means to remain aware of existing research and influence ongoing discovery in the areas of beef palatability, packaging, carcass data analysis, consumer product acceptance, etc., that can be leveraged to enhance brand training, sales and consumer positioning
Coordinate with the Director of Packing to identify and pursue steps within the certification, fabrication and packaging process that can further enhance product consistency and the brand’s premium image, including but not limited to furthering the use of technology in the certification process, improved packaging, carcass specification refinements, product quality audits, etc.
Assist in the coordination of the brand’s internal Product Council
Serve as a key staff resource for meat science questions and troubleshooting around product quality, packaging, etc.
Culinary Center Leadership:
Dynamic and engaging educator who is confident fabricating sides of beef while instructing
Lead educational sessions at the Certified Angus Beef ® Culinary Center focused on beef quality, Certified Angus Beef ® brand difference, and beef cuts with the ultimate objective to drive sales
Continual focus on product innovation – looking at underutilized cuts, aging and product ideas that provide sales opportunities for individual segments – foodservice, retail, international and restaurant
Engaged member of the Culinary Center meat team who is willing to assist with product fabrication, making ground beef and artisanal sausages as well as meat lab clean up, product sales and inventories as needed
Close working partnership with the education and sales teams to understand event goals and develop content that delivers results toward those goals
Maintain current standard operating procedures for the meat lab, aging, grinding and product inventory
Train team members on, and follow and enforce, standard operating and food safety procedures. Maintain a clean, sanitary and organized work environment
Educational Outreach to Field:
Develop and deliver educational content focused on increasing beef product knowledge to drive Certified Angus Beef ® brand sales Support marketing team in developing sales content for product sell sheets and videos
Participate in educational seminars, meat labs and sales trainings with our licensed partners
Join the Certified Angus Beef ® Master of Brand Advantages instructional team leading the meat week to developing students’ core practical meat knowledge and prepare them to overcome objections and confidently sell beef
Serve as a brand spokesperson for meat industry topics, trade media interviews and additional audiences as warranted
Participate in ongoing media and spokesperson training
Travel approximately 35% - 40%
